  • 1 lb orzo pasta
  • 12 oz sun-dried tomatoes
  • 1/2 lb kalamata olives
  • 1 cup spinach
  • 1/3 lb feta cheese
  • Fresh basil
  • Fresh mint
  • 2 qt water
  • 1/2 tsp salt
  • 1/2 cup chopped red onion
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • Zest from 1 lemon
  • 1/2 tsp black pepper

Instructions

  1. Boil 2 quarts of water in a large pot with salt. Add the orzo and cook until al dente according to package instructions.
  2. While the orzo cooks, chop the kalamata olives, red onion, spinach, basil, and mint.
  3. Drain the cooked orzo and mix it with the chopped ingredients in a large bowl.
  4. In a separate bowl, whisk together olive oil, lemon juice, lemon zest, and crumbled feta cheese before adding to the pasta mixture.
  5. Toss everything together gently and refrigerate for at least 30 minutes before serving.
