  • 6 tablespoons sugar (divided)
  • 1 ⅓ cups milk
  • 4 egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon butter
  • 9-inch baked tart crust (pâte sucrée or pâte sablée)
  • 1 pint fresh strawberries
  • 2 tablespoons strawberry or apricot jam

Instructions

  1. Combine the seeds of the vanilla bean with 3 tablespoons of sugar. Heat 1 cup of milk with the vanilla pod until warm.
  2. In a stand mixer, whisk egg yolks and remaining sugar on high until light and fluffy.
  3. Whisk cornstarch into the remaining milk until smooth; combine it with the egg mixture gradually.
  4. Cook the combined mixture in a saucepan over low heat while whisking until thickened; stir in butter and cool.
  5. Assemble by spreading chilled pastry cream over the tart crust, topping with sliced strawberries arranged in circles, and glaze with warmed jam before serving.
