  • 1 lb ground beef (85% lean)
  • 1 lb baby bok choy, washed and halved
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp vegetable oil
  • Green onions for garnish

Instructions

  1. Prepare the sauce by whisking together soy sauce, oyster sauce, sugar, sesame oil, and cornstarch slurry in a small bowl.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the ground beef and cook until browned (about 5-6 minutes). Remove and set aside.
  3. In the same pan, add the remaining oil and sauté garlic and ginger until fragrant (about 30 seconds).
  4. Add bok choy cut-side down and sear for about 2 minutes. Add a splash of water to steam slightly by covering for another minute.
  5. Return the cooked beef to the pan and pour the prepared sauce over everything. Toss continuously for about 1-2 minutes until the sauce thickens.
  6. Serve immediately garnished with chopped green onions.
