- 170 g butter (room temperature)
- 150 g granulated sugar
- 50 g brown sugar
- 1 egg
- 80 g molasses
- 4 tsp grated orange zest
- 12 g grated gingerroot
- 240 g all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/4 tsp salt
- 55 g crystallized ginger (chopped)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a stand mixer, cream together butter, granulated sugar, and brown sugar until fluffy. Add the egg, then mix in molasses, orange zest, and ginger until smooth.
- In another bowl, whisk together flour, baking soda, salt, cinnamon, and cloves. Gradually add this mixture to the wet ingredients until fully combined.
- Chill the dough for about 30 minutes in the refrigerator.
- Shape the dough into balls (about 1 inch), placing a piece of candied ginger in the center of each ball before arranging them on baking sheets with space in between.
- Bake for 12–15 minutes until edges are firm but centers remain soft. Cool on wire racks before serving.
