  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter, cubed (for caramel)
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter; press into the pan and bake for 10 minutes.
  3. Beat cream cheese until smooth; add sugar, eggs (one at a time), vanilla extract, and sour cream.
  4. Pour filling over cooled crust; place in a water bath and bake for 55-65 minutes until firm but jiggly.
  5. Cool in the oven with the door ajar; refrigerate for at least 4 hours or overnight.
  6. Sauté diced apples with butter, brown sugar, cinnamon, and nutmeg until soft.
  7. Make salted caramel by melting sugar until amber; stir in butter and heavy cream followed by sea salt.
