Ingredients
- 2–2.5 lbs beef flank steak
- 1 large onion
- 4–5 cloves garlic
- 2 bell peppers (red and green)
- 1 can (8 oz) tomato sauce
- 1–2 cups beef broth
- Salt, pepper, cumin, smoked paprika, Sazon
Instructions
- Season the beef generously with salt, pepper, cumin, and Sazon.
- Sear the beef in a skillet with oil until browned on both sides.
- Cook chopped onions, garlic, bell peppers, and tomatoes in the same skillet until softened. Add tomato sauce and broth.
- Transfer ¾ of the vegetable mixture to the slow cooker and place the seared beef on top.
- Cook on high for 3.5-4 hours or low for 7-8 hours until tender.
- Shred the beef and mix with remaining sauce before serving.
