Ingredients
- 18 ounces sweetened red bean paste
- 3 cups bread flour
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon instant yeast
- 1 cup warm whole milk
- 1/3 cup warm heavy cream
- 1 egg
- 1 egg yolk (for egg wash)
- Optional: 1 tablespoon sesame seeds for topping
Instructions
- In a stand mixer, combine the dry ingredients: bread flour, sugar, salt, instant yeast.
- Add wet ingredients: warm milk, warm cream, and the egg. Knead on low speed for about 10 minutes until dough is tacky.
- Cover the dough and let it rise for about 2 hours until it doubles in size.
- Divide the dough into nine equal pieces and form each piece into balls.
- Flatten each ball, fill with red bean paste, seal tightly, and place seam-side down on a baking sheet.
- Allow buns to rise again for about 30 minutes while preheating the oven to 350°F.
