Ingredients

  • 18 ounces sweetened red bean paste
  • 3 cups bread flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon instant yeast
  • 1 cup warm whole milk
  • 1/3 cup warm heavy cream
  • 1 egg
  • 1 egg yolk (for egg wash)
  • Optional: 1 tablespoon sesame seeds for topping

Instructions

  1. In a stand mixer, combine the dry ingredients: bread flour, sugar, salt, instant yeast.
  2. Add wet ingredients: warm milk, warm cream, and the egg. Knead on low speed for about 10 minutes until dough is tacky.
  3. Cover the dough and let it rise for about 2 hours until it doubles in size.
  4. Divide the dough into nine equal pieces and form each piece into balls.
  5. Flatten each ball, fill with red bean paste, seal tightly, and place seam-side down on a baking sheet.
  6. Allow buns to rise again for about 30 minutes while preheating the oven to 350°F.
  7. Brush with egg wash, sprinkle sesame seeds if desired, and bake for approximately 20 minutes.
