  • 2 1/2 tsp pumpkin spice
  • 225 g dark brown sugar
  • 280 g pumpkin purée
  • 75 g vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 200 g butter (for frosting)
  • 15 g dark brown sugar (for frosting)
  • 100 g full-fat cream cheese (for frosting)
  • 345 g powdered sugar (sifted, for frosting)
  • 1/2 tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 175°C (350°F) and line a cupcake tin with liners.
  2. In a bowl, mix flour, baking powder, baking soda, salt, and pumpkin spice.
  3. In another bowl, beat together brown sugar and pumpkin purée until smooth. Add oil, eggs, and vanilla; mix until combined.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Spoon batter into liners and fill two-thirds full. Bake for about 23 minutes or until a toothpick comes out clean.
  6. Cool before frosting with the brown sugar cream cheese mixture.
