  • 115 g unsalted butter (melted or room temp)
  • 135 g light brown soft sugar
  • 55 g granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 275 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 100 g milk chocolate chips
  • 100300 g mini eggs

Instructions

  1. Preheat the oven to 190ºC (170ºC fan) and line a 9×9 inch baking tin with parchment paper.
  2. In a mixing bowl, combine melted butter and sugars until well mixed.
  3. Add the egg and vanilla extract; mix until smooth.
  4. Sift in flour, bicarbonate of soda, cornflour, and salt; stir until combined.
  5. Gently fold in chocolate chips and most of the mini eggs.
  6. Press the mixture into the lined tin and decorate with remaining mini eggs.
  7. Bake for 18-22 minutes until the top is dry; cool before cutting.
