  • Zest of 2 lemons
  • 2 teaspoons lemon juice
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups powdered sugar for glaze
  • 12 tablespoons lemon juice for glaze

Instructions

  1. Cream the butter and sugar in a large bowl until light and fluffy.
  2. Mix in the egg, ricotta cheese, lemon zest, and lemon juice until well combined.
  3. Gradually add the dry ingredients (flour, baking powder, baking soda, salt) and mix until just combined.
  4. Chill the dough for at least 2 hours or overnight.
  5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop dough onto the prepared sheet, leaving space between each cookie.
  7. Bake for 12-13 minutes until lightly golden on the bottom.
  8. Cool on a wire rack before glazing with powdered sugar mixed with lemon juice.
