  • 1/3 cup unsalted butter (room temperature)
  • ¾ cup sugar (for batter)
  • 2 eggs
  • ¾ cup Greek yogurt
  • 1 teaspoon vanilla extract
  • Grated zest from 1 lemon
  • 2 tablespoons fresh lemon juice
  • ¾ cup powdered sugar (for glaze)
  • 12 tablespoons milk or cream

Instructions

  1. Make the lemon curd: In a double boiler, combine egg yolks, sugar, lemon zest, and juice. Stir until thickened, then whisk in cold butter.
  2. Prepare the muffin batter: Preheat oven to 350°F (175°C). Mix flour, baking powder, and salt. In another bowl, cream butter and sugar; add eggs, yogurt, and zest. Gradually mix in dry ingredients.
  3. Assemble: Fill muffin liners halfway with batter; add lemon curd; cover with more batter.
  4. Bake for about 25 minutes until golden brown. Let cool before glazing.
