Instructions
- Make the lemon curd: In a double boiler, combine egg yolks, sugar, lemon zest, and juice. Stir until thickened, then whisk in cold butter.
- Prepare the muffin batter: Preheat oven to 350°F (175°C). Mix flour, baking powder, and salt. In another bowl, cream butter and sugar; add eggs, yogurt, and zest. Gradually mix in dry ingredients.
- Assemble: Fill muffin liners halfway with batter; add lemon curd; cover with more batter.
- Bake for about 25 minutes until golden brown. Let cool before glazing.
