  • 1/2 cup (113 grams) unsalted butter
  • 1/2 cup (100 grams) granulated sugar
  • 1 cup (92 grams) rolled oats
  • 1/4 cup (31 grams) all-purpose flour or whole wheat pastry flour
  • 4 large (50 grams each, out of shell) eggs
  • 1/2 cup (160 grams) honey
  • 1 tablespoon lemon zest
  • 1/2 cup (120 ml) freshly squeezed lemon juice
  • 1/4 cup (31 grams) all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Stir in rolled oats and flour until fully combined. Press the mixture into the bottom of a greased 9×9 inch baking pan.
  3. In another bowl, whisk eggs until well beaten; then add honey, lemon zest, and freshly squeezed lemon juice, mixing until smooth. Finally, incorporate the remaining flour until just combined.
  4. Pour the filling over the crust and bake for 25-30 minutes or until set.
  5. Allow to cool completely before slicing into squares.
