- 1/2 cup (160 grams) honey
- 1 tablespoon lemon zest
- 1/2 cup (120 ml) freshly squeezed lemon juice
- 1/4 cup (31 grams) all-purpose flour
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Stir in rolled oats and flour until fully combined. Press the mixture into the bottom of a greased 9×9 inch baking pan.
- In another bowl, whisk eggs until well beaten; then add honey, lemon zest, and freshly squeezed lemon juice, mixing until smooth. Finally, incorporate the remaining flour until just combined.
- Pour the filling over the crust and bake for 25-30 minutes or until set.
