  • 1 3/4 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 8 tablespoons unsalted butter
  • 24 ounces cream cheese, room temperature
  • 3/4 cup granulated sugar
  • 3 large eggs, room temperature
  • 2 tablespoons all-purpose flour
  • 1 1/2 tablespoons lime zest (plus more for topping)
  • 1 1/2 tablespoons key lime juice
  • 1/2 cup stabilized whipped cream (piped on top)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9-inch springform pan with parchment paper and lightly grease the sides.
  2. Combine graham cracker crumbs, melted butter, and sugar in a bowl until it resembles wet sand. Press into the bottom of the springform pan and bake for 6 to 8 minutes until golden brown.
  3. In a mixing bowl, blend cream cheese and sugar until smooth. Add eggs one at a time, then mix in flour, lime zest, and key lime juice until fully combined.
  4. Pour filling over the hot crust and bake at 325°F (160°C) for 35 minutes. Turn off the oven and let cool inside for an hour before refrigerating for at least 4 hours before serving.
  5. Once chilled, remove from the pan, top with whipped cream and lime zest, slice, and enjoy!
