- 1 1/2 tablespoons lime zest (plus more for topping)
- 1 1/2 tablespoons key lime juice
- 1/2 cup stabilized whipped cream (piped on top)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9-inch springform pan with parchment paper and lightly grease the sides.
- Combine graham cracker crumbs, melted butter, and sugar in a bowl until it resembles wet sand. Press into the bottom of the springform pan and bake for 6 to 8 minutes until golden brown.
- In a mixing bowl, blend cream cheese and sugar until smooth. Add eggs one at a time, then mix in flour, lime zest, and key lime juice until fully combined.
- Pour filling over the hot crust and bake at 325°F (160°C) for 35 minutes. Turn off the oven and let cool inside for an hour before refrigerating for at least 4 hours before serving.
- Once chilled, remove from the pan, top with whipped cream and lime zest, slice, and enjoy!
