  • 1 large onion
  • 3 large carrots
  • 2 stalks celery
  • 5 cloves garlic
  • 5 cups chicken broth
  • 1 pound shelf-stable gnocchi
  • 2 cups cooked chicken (shredded)
  • Fresh spinach

Instructions

  3. Stir in tomato paste and chicken base mixed with flour for about a minute.
  4. Pour in chicken broth while scraping the pot's bottom to combine.
  5. Bring to a simmer; cover partially and let it cook on low heat for 15 minutes.
  6. Add shredded chicken, spinach, evaporated milk, and gnocchi; cook for another 5-10 minutes until heated through.
  7. Serve hot topped with grated parmesan cheese.
