  • 1 tbsp olive oil
  • 1 onion, sliced
  • 4 carrots, cut into chunks
  • 4 gold potatoes, quartered
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Season the chuck roast generously with salt and pepper on all sides.
  2. In a hot skillet with olive oil, sear the roast for about 2–3 minutes on each side until browned.
  3. Place sliced onion, carrot chunks, and quartered potatoes in the slow cooker.
  4. Add minced garlic, dried thyme, and bay leaf on top of vegetables; pour Worcestershire sauce over.
  5. Carefully place the seared roast on top of the vegetables and pour in beef broth around it.
