  • 1/4 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1 cup pineapple juice
  • 1 cup pineapple chunks
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 2 cloves garlic, minced

Instructions

  4. Bring to a simmer, then whisk in cornstarch slurry until thickened (about 2–3 minutes).
  5. Return chicken and pineapple to the skillet, stirring until heated through (about 2 minutes).
