Ingredients
- 2 slices turkey bacon
- 1 large yellow onion
- 1 cup carrots
- ¾ cup celery
- 4 tsp garlic
- 2 (15 oz) cans crushed tomatoes
- 2 (15 oz) cans cannellini beans
- 4 cups low sodium chicken broth
- 1 (16 oz) box ditalini pasta
- Parmesan cheese for serving
Instructions
- Cook turkey bacon in a skillet until crispy. Drain and slice.
- In the slow cooker, combine sliced bacon, diced onion, sliced carrots, diced celery, garlic, crushed tomatoes, cannellini beans, chicken broth, salt, pepper, thyme, basil, parsley, and tomato paste. Stir well.
- Cover and cook on low for 7-8 hours or high for 4-5 hours.
- About 30 minutes before serving, stir in uncooked ditalini pasta.
