  • 32 oz ricotta cheese
  • 48 oz marinara sauce (2 jars)
  • 12 oz gluten-free penne pasta
  • 16 oz shredded mozzarella cheese
  • 2 large eggs
  • 1/4 cup grated parmesan cheese
  • Basil
  • Salt
  • Pepper

Instructions

  1. Spray the slow cooker insert with non-stick spray.
  2. In a mixing bowl, combine ricotta, eggs, parmesan, basil, salt, and pepper until smooth.
  3. Layer the bottom of the slow cooker with marinara sauce.
  4. Add half the gluten-free penne evenly over the sauce.
  5. Drop spoonfuls of the ricotta mixture over the pasta.
  6. Sprinkle half of the mozzarella cheese on top.
  7. Repeat layers with remaining ingredients: sauce, pasta, ricotta mixture, and mozzarella.
  8. Finish with a final layer of marinara and remaining mozzarella and parmesan on top.
  9. Cook on high for 2½ hours until bubbly.
