Ingredients
- 2 pounds mixed baby potatoes
- 1 lemon, quartered
- 4 cloves garlic
- 1/4 cup fresh oregano
- 1/4 cup extra virgin olive oil
- 8 ounces feta cheese
- 3 ounces cream cheese
- Sesame seeds (for garnish)
Instructions
- Preheat your oven to 425°F.
- Toss halved baby potatoes with quartered lemon, smashed garlic, oregano, olive oil, salt, and pepper on a baking sheet.
- Roast for 20 minutes until tender. Remove charred lemon and garlic; return pan to oven for another 20–25 minutes until crispy.
- For the herb oil, mash roasted lemon and garlic; mix with olive oil, chopped herbs, honey, salt, and chili flakes.
- Blend feta cheese and cream cheese with lemon juice until smooth for the sauce.
- Toss crispy potatoes in half of the herb oil and sesame seeds; serve drizzled with feta sauce and remaining herb oil.
