  • 4 strips Turkey Bacon
  • 1 small yellow onion
  • 2 celery stalks
  • 2 garlic cloves
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 2 cups Yukon Gold potatoes
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups corn (fresh, frozen, or canned)
  • 1 cup half & half
  • 1/3 cup sour cream

Instructions

  1. Cook Turkey Bacon in a large pot until crispy. Remove and set aside.
  2. Sauté diced onion, chopped celery, and minced garlic in the bacon fat until softened.
  3. Gradually stir in flour, then slowly add chicken broth while stirring constantly.
  4. Add diced potatoes along with thyme and parsley; simmer for about 15 minutes until potatoes are tender.
  5. Stir in shredded chicken and corn; cook for an additional 5–7 minutes.
  6. Reduce heat to low and gently mix in half & half and sour cream; simmer until desired consistency is reached.
  7. Serve hot, garnished with extra crispy Turkey Bacon if desired.
