  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • 115g (½ cup) unsalted butter, softened
  • 100g (½ cup) brown sugar
  • 2 large eggs
  • 200g (1 cup) grated carrots
  • 150g (1 cup) chopped pitted dates

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and line a cake pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, cream together the butter and brown sugar until fluffy. Beat in eggs one at a time.
  4. Gradually mix in the dry ingredients alternating with coconut milk until just combined.
  5. Fold in grated carrots and chopped dates.
  6. Pour batter into the prepared pan and bake for 35–40 minutes or until a toothpick comes out clean.
  7. Cool for 10 minutes before transferring to a wire rack.
