- 500g cooked rice
- 10 cloves garlic

- 3 tablespoons kecap manis (sweet soy sauce)
- 700ml chicken stock
- 1 cucumber
- Spring onions
- Neutral oil
- Sesame oil
- Toasted sesame seeds
Instructions
- Prepare the broth by smashing garlic and ginger, adding them to a large saucepan with chicken stock. Simmer over medium heat.
- Marinate the chicken thighs in kecap manis and seasonings for at least 15 minutes.
- Sauté spring onion greens in a frying pan with neutral oil until wilted; stir in sesame oil and sesame seeds.
- Cook marinated chicken thighs in the same pan until golden brown (7-8 minutes). Add water from marinade and reduce until thickened.
- Slice cucumber and season with salt. Reheat cooked rice.
- Serve by placing rice in bowls, ladling broth over it, adding sliced chicken, cucumber, and drizzle with sambal.
