  • 1/2 cup popcorn kernels (or 10 cups popped popcorn)
  • 1/2 cup unsalted butter
  • 1 cup light brown sugar
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon pure vanilla extract
  • 1 cup dried apple rings, chopped
  • 3/4 cup candy-coated chocolate pieces
  • Optional: 1/2 cup salted peanuts

Instructions

  1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. Pop the popcorn kernels (or use pre-popped popcorn) and place in a large mixing bowl.
  3. In a medium saucepan over medium heat, melt the butter, then add brown sugar, corn syrup, and salt. Stir until boiling.
  4. Boil without stirring for about 4–5 minutes. Remove from heat and stir in baking soda and vanilla extract.
  5. Pour caramel sauce over popcorn and toss gently to coat.
  6. Spread on the prepared baking sheet and bake for 40 minutes, stirring every 10–15 minutes.
  7. Cool for 10 minutes before breaking apart clumps. Add dried apples, chocolate pieces, and optional peanuts.
