- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 stalks celery, diced
- 2 medium potatoes, peeled and cubed
- 3 cups chicken broth
- 1 cup milk
- 1 cup heavy cream
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prepare the ingredients: chop onion, mince garlic, dice celery, and cube potatoes.
- In a large pot over medium heat, melt butter and sauté the onion, garlic, and celery until softened (about 4–5 minutes).
- Add cubed potatoes and chicken broth; bring to a gentle boil then reduce heat to simmer for 10–12 minutes until potatoes are tender.
- Season with smoked paprika, salt, and pepper; stir well.
- Slowly add milk and heavy cream while stirring; simmer gently for 5–7 minutes without boiling.
- Fold in lump crab meat; let it heat through for another 3–4 minutes.
- Taste and adjust seasoning as needed before serving garnished with fresh parsley.
