  • 1 tablespoon instant espresso powder
  • 14 oz sweetened condensed milk
  • 3.4 oz instant vanilla pudding mix
  • 1 cup Baileys Irish Cream (divided)
  • 3.9 oz instant chocolate pudding mix
  • ½ cup whole milk
  • 8 oz Cool Whip (thawed)
  • Optional: mini chocolate chips or chocolate shavings for garnish

Instructions

  1. Preheat your oven and prepare the cake mix according to package instructions, adding espresso powder.
  2. Bake in a 9×13 inch baking pan and allow to cool completely.
  3. Poke holes across the cooled cake using a wooden spoon handle.
  4. In a bowl, blend sweetened condensed milk, vanilla pudding mix, and half of the Baileys until smooth; refrigerate for 5 minutes.
  5. Pour the filling over the poke holes in the cake.
  6. Prepare the chocolate topping by whisking chocolate pudding mix, whole milk, and remaining Baileys until thickened; fold in Cool Whip gently.
