- 6 garlic cloves, thinly sliced
- 3-inch piece of ginger, peeled and finely chopped
- 1 bundle scallions (6 to 8 oz), divided
- 10 cups water
- 4 tsp kosher salt
- 8 oz dried ramen noodles or curly noodles
- 1 cup carrot, cut into thin matchsticks
- 1/4 cup black rice vinegar
- 1/4 cup soy sauce
- 2 tbsp toasted sesame oil
- Crispy chili oil, to taste
Instructions
- Gather and prepare all ingredients: chop garlic, ginger, scallions (dividing whites and greens), and carrots.
- In a large pot over medium heat, combine chicken thighs with water. Bring to a boil then reduce heat to low. Add salt and pepper; simmer for about 15 minutes until cooked through.
- Remove chicken from pot; add sliced garlic, ginger, and scallion whites to the broth. Cook for 3–5 minutes until fragrant.
- Add noodles and carrots; cook according to package instructions until noodles are tender.
- Shred cooked chicken into bite-sized pieces; return to pot along with black rice vinegar, soy sauce, toasted sesame oil, and crispy chili oil if desired. Stir well.
- Serve hot in bowls garnished with green scallion tops.
