  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 2 tablespoons brown sugar (packed)
  • 1 teaspoon baking powder
  • pinch of salt
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter (melted)
  • 1 egg (slightly beaten)
  • 1/3 cup + 2 tablespoons milk
  • 1 1/2 cups finely diced apples (I used 1 medium Granny Smith and 1 medium Gala apple)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (may need more)
  • 1/4 teaspoon vanilla extract
  • Canola oil (for frying)

Instructions

  1. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.
  2. Create a well in the dry mixture and add milk, melted butter, beaten egg, and vanilla. Stir until combined.
  3. Gently fold in finely diced apples.
  4. Heat canola oil in a frying pan over medium heat until it reaches 350°F.
  5. Scoop batter into the hot oil using a mini ice cream scoop and fry for 1½ – 2 minutes on each side until golden brown.
  6. Drain on paper towels and prepare glaze by mixing powdered sugar, milk, and vanilla extract.
  7. Dip each fritter in the glaze and let set on a wire rack.
