Ingredients
- 1.5 cups shredded mozzarella cheese
- 0.5 cup shredded Parmesan cheese
- 2 teaspoons garlic powder
- 1 teaspoon basil
- 1 teaspoon oregano
- Salt and pepper to taste
- 2 zucchini squash (sliced thin)
- 4–5 tomatoes (sliced)
- 2 tablespoons butter (melted)
- 0.75 cup fine bread crumbs
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×9 baking dish.
- In a mixing bowl, combine mozzarella, Parmesan, garlic powder, basil, oregano, salt, and pepper.
- Layer sliced zucchini at the bottom of the baking dish followed by a quarter of the cheese mixture and then sliced tomatoes. Repeat until all ingredients are used.
- Mix melted butter with bread crumbs and sprinkle over the top of the casserole.
- Cover with foil and bake for 25 minutes; then remove foil and bake for an additional 20 minutes until golden brown.
- Allow to cool for 5 minutes before serving.
