  • 4 medium zucchinis
  • 1 lb lean ground turkey
  • 1 cup low-carb marinara sauce
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • Garlic, dried basil, oregano, salt, pepper, and olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips, salt lightly, and let sit for 10-15 minutes before patting dry.
  3. In a skillet over medium heat, add olive oil and cook the ground turkey until browned. Stir in minced garlic and half of the dried herbs, then pour in the marinara sauce and simmer for 5 minutes.
  4. In a mixing bowl, combine ricotta cheese, one cup of mozzarella, Parmesan cheese, eggs, and remaining herbs until smooth.
  5. In a baking dish, layer meat sauce at the bottom followed by zucchini strips and cheese mixture. Repeat layers two more times and finish with meat sauce topped with remaining mozzarella.
  6. Cover with foil and bake for 30 minutes; then uncover and bake for an additional 15 minutes until golden brown. Let cool for 10-15 minutes before serving.
