Ingredients

  • 1 package White Cake Mix (15.25 ounces)
  • 1/2 cup all-purpose flour
  • 2 sticks unsalted butter (room temperature)
  • 1/2 cup mini chocolate chips
  • 8 drops pink gel food color
  • 1 teaspoon watermelon extract (optional)
  • 2 packages Wilton Green Candy Melts (12 ounces each)

Instructions

  1. Prepare a baking sheet or cutting board by covering it with waxed paper.
  2. In a mixing bowl, combine room temperature butter, cake mix, and flour until smooth.
  3. Fold in watermelon extract and pink gel food color; adjust consistency with milk if needed.
  4. Gently incorporate mini chocolate chips into the mixture.
  5. Roll the batter into balls using a cookie scoop and place them on the prepared sheet.
  6. Freeze for 10 minutes or refrigerate for 30 minutes before coating.
  7. Melt green candy melts in a microwave-safe bowl; dip each truffle and let excess drip off.
  8. Place coated truffles back on waxed paper to set in the fridge for at least 20–30 minutes.
