Ingredients

  • 1/2 cup rice flour
  • 1/4 cup all-purpose flour
  • 1 egg
  • 2 green onions (finely chopped)
  • Fresh cilantro and mint leaves (optional)
  • Vegetable oil (for frying)

Instructions

  1. In a mixing bowl, combine rice flour, all-purpose flour, baking powder, salt, and black pepper.
  2. Whisk in cold water and egg until smooth. Fold in shrimp, green onions, cilantro, and mint.
  3. Heat oil in a frying pan over medium-high heat.
  4. Drop spoonfuls of batter into the hot oil and fry until golden brown on both sides.
  5. For the dipping sauce, mix fish sauce, sugar, lime juice, warm water, minced garlic, and optional chilies.
