- 1 cup quinoa (rinsed)
- 1 bunch fresh asparagus (trimmed)
- 1 can (15 oz) canned chickpeas (drained and rinsed)
- 1 cup cherry tomatoes (halved)
- ½ small red onion (finely chopped)
- ½ cup fresh parsley (chopped)
- 3 tbsp extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Cook the quinoa by bringing 2 cups of water to a boil in a saucepan. Add the rinsed quinoa, cover, reduce heat, and simmer for about 15 minutes until the water is absorbed. Fluff with a fork.
- Blanch the asparagus in boiling salted water for about 3 minutes until bright green and crisp. Transfer to an ice bath.
- Once cooled, chop the asparagus into bite-sized pieces.
- In a large bowl, combine cooked quinoa, chickpeas, asparagus, tomatoes, onion, and parsley.
- Drizzle with olive oil and lemon juice; toss gently to mix well.
- Season with salt and pepper; serve immediately or chill before serving.
