  • 8 boneless, skinless chicken breasts
  • 1/2 cup extra virgin olive oil
  • 1/3 cup fresh-squeezed lemon juice
  • 1 tsp fresh lemon zest
  • 1 tsp Greek seasoning
  • 1 tsp poultry seasoning
  • 1 tsp dried oregano
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Trim visible fat from chicken breasts and make small slits on each side.
  2. Combine olive oil, lemon juice, zest, seasonings, and black pepper in a bowl.
  3. Place chicken in a Ziploc bag, pour marinade over it, seal tightly, and refrigerate for 6-8 hours.
  4. Drain excess marinade before grilling; allow chicken to reach room temperature.
  5. Preheat grill to medium-high heat and grill chicken for about 4 minutes per side until marked and cooked through (internal temperature of 165F/75C).
  6. Let rest briefly before serving.
