Ingredients

  • 3 cloves garlic (chopped)
  • 10 ounces fresh baby spinach
  • 16 ounces vegan cream cheese (room temperature)
  • ⅓ cup vegan mayo
  • 1 (14-ounce) can artichoke hearts (drained and chopped)
  • ¼ cup nutritional yeast (or vegan parmesan)
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large pan, heat the oil over medium heat and sauté the garlic until golden brown, about 2 minutes. Add the spinach and cook until wilted, then remove from heat.
  3. In a baking dish, mix together the vegan cream cheese, vegan mayo, chopped artichokes, nutritional yeast, sautéed spinach, salt, and pepper until well combined.
  4. Bake for 15–20 minutes or until hot and bubbly. Serve warm with your favorite dippers.
