  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (diced)

  • 2 pounds potatoes (chopped)

  • Fresh parsley (for garnish)

Instructions

  3. Blend half of the soup until smooth using an immersion blender or regular blender. Return blended mixture to the pot.
  4. Stir in dairy-free cream and adjust seasoning if needed. Simmer for a few more minutes.
  5. Serve hot, garnished with fresh parsley.
