  • Vegan butter (or oil)
  • Yellow onion
  • Celery
  • Carrots
  • Dried thyme
  • Black pepper
  • Garlic
  • All-purpose flour (or gluten-free alternative)
  • Cooked chickpeas
  • Vegan chicken broth
  • Gnocchi
  • Vegan cream
  • Baby spinach (optional)

Instructions

  1. In a large nonstick pot over medium-high heat, melt vegan butter. Add diced onion, celery, and sliced carrots; sauté for about 3 minutes.
  2. Stir in black pepper and minced garlic, cooking for an additional 30 seconds.
  3. Whisk in flour until combined; then add chickpeas and gradually stir in broth.
  4. Add gnocchi and bring the mixture to a boil. Reduce heat and simmer for about 8 minutes.
  5. Stir in vegan cream and chopped spinach; cook for 1–2 more minutes until spinach wilts.
