  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a small bowl, combine graham cracker crumbs, sugar, and melted butter; press into cupcake liners.
  3. In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in sour cream, heavy cream, vanilla bean seeds, and vanilla extract until fully incorporated.
  4. Divide the cheesecake batter evenly among the prepared liners, filling each about 3/4 full. Bake for 20–25 minutes or until centers are set but slightly jiggly. Remove from oven and allow to cool to room temperature.
  5. Refrigerate cooled cupcakes for at least 2 hours or until thoroughly chilled and set.
  6. Just before serving, sprinkle 1 teaspoon of granulated sugar over the top of each chilled cupcake. Use a kitchen torch to carefully caramelize the sugar until it forms a crisp golden crust. Let topping cool for 1–2 minutes before serving.
