Ingredients
- 1 cup graham cracker crumbs
- 2 tablespoons granulated sugar
- 4 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1 vanilla bean, split and seeds scraped
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar (for topping)
Instructions
- Preheat oven to 325°F (160°C) and line a muffin tin with cupcake liners.
- In a small bowl, combine graham cracker crumbs, sugar, and melted butter; press into cupcake liners.
- In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in sour cream, heavy cream, vanilla bean seeds, and vanilla extract until fully incorporated.
- Divide the cheesecake batter evenly among the prepared liners, filling each about 3/4 full. Bake for 20–25 minutes or until centers are set but slightly jiggly. Remove from oven and allow to cool to room temperature.
- Refrigerate cooled cupcakes for at least 2 hours or until thoroughly chilled and set.
- Just before serving, sprinkle 1 teaspoon of granulated sugar over the top of each chilled cupcake. Use a kitchen torch to carefully caramelize the sugar until it forms a crisp golden crust. Let topping cool for 1–2 minutes before serving.
