  • 1 large egg
  • 1 tsp ube extract
  • 6 tbsp unsalted butter (softened)
  • 3¼ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 1 package instant dry yeast
  • ⅓ cup ube halaya jam
  • ¼ cup brown sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp unsalted butter (softened)
  • ⅓ cup heavy cream
  • ½ cup cream cheese (softened)
  • 2 tbsp unsalted butter (softened)
  • ½ tsp vanilla extract
  • ⅛ tsp salt
  • ⅔ cup confectioners’ sugar

Instructions

  1. In a stand mixer bowl, combine warm milk and yeast; let it sit for a few minutes.
  2. Add egg, softened butter, and granulated sugar; mix until combined.
  3. Gradually add salt and flour; mix for one minute before switching to the dough hook to knead for 5–7 minutes until slightly sticky.
  4. Transfer to a greased bowl, cover, and let rise in a warm place for about 30 minutes or until doubled in size.
  5. Prepare the filling by mixing softened butter, brown sugar, ground cinnamon, and ube halaya jam in a small bowl.
  6. Roll out the dough into a rectangle (15×12 inches) on a floured surface; spread the filling evenly over it.
  7. Roll tightly from one long edge to form a log; cut into nine equal pieces using a serrated knife.
  8. Place in a greased baking pan; let rise for another 30 minutes.
  9. Preheat oven to 350°F (175°C); bake rolls for 21–23 minutes until lightly browned.
  10. Prepare cream cheese frosting by beating together softened butter, cream cheese, vanilla extract, salt, and confectioners’ sugar until smooth.
