  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup fresh pineapple chunks
  • 1 medium cucumber, sliced
  • 1 cup bell peppers, sliced (any color)
  • 1 small red onion, thinly sliced
  • ½ cup fresh cilantro, chopped
  • ¼ cup extra virgin olive oil
  • ¼ cup freshly squeezed lime juice
  • 2 tbsp honey or agave syrup
  • Salt and pepper to taste

Instructions

  1. 1. Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side until cooked through (internal temperature of 165°F). Let rest before slicing.
