Ingredients
- 200 g Dark chocolate
- 200 g Butter
- 1 tsp Vanilla extract
- 1/2 tsp Kosher salt
- 3 tbsp Cocoa powder (plus additional for dusting)
- 5 Eggs (separated)
- 1 1/4 cups Granulated sugar
- 1 1/2 cups Almond flour
Instructions
- Preheat oven to 180°C (350°F) and line an 8-9 inch springform pan with parchment paper.
- Melt dark chocolate and butter together until smooth; let cool.
- In a bowl, whisk egg yolks with vanilla extract, kosher salt, and cocoa powder into the chocolate mixture.
- Whip egg whites until soft peaks form, gradually adding granulated sugar until stiff peaks form.
- Fold chocolate mixture into egg whites gently, then add almond flour and fold until just combined.
- Pour batter into prepared pan and smooth the top.
- Bake for about 30 minutes until a skewer comes out with moist crumbs.
- Allow to cool for about 40 minutes before removing from pan.
