Ingredients

  • 500g chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 400g canned chopped tomatoes
  • 200ml chicken stock
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • Fresh parsley for garnish
  • 2 cups cooked white rice

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Sauté onion and garlic until soft.
  3. Add chicken pieces; season with salt, pepper, smoked paprika, and oregano. Brown lightly until cooked through.
  4. Stir in bell peppers; cook for about 3 minutes until slightly softened.
  5. Pour in chopped tomatoes and chicken stock; bring to a simmer. Cook uncovered for about 15-20 minutes until the sauce thickens.
  6. Serve hot over fluffy rice, garnished with fresh parsley.
