  • 180 g all-purpose flour
  • 2 tablespoons instant espresso powder
  • 115 g unsalted butter (softened)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • Cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, cream together softened butter with both sugars until fluffy. Add egg and vanilla; mix well.
  4. Gradually combine dry ingredients with wet mixture until just combined.
  5. Scoop dough onto a lined baking sheet and bake for 12 minutes until edges are golden but centers remain soft.
  6. For the topping, beat mascarpone cheese with whipping cream, powdered sugar, and vanilla until smooth.
  7. Once cookies cool, spread mascarpone topping on each and dust with cocoa powder.
