Ingredients
- 190g graham crackers
- 35g sugar
- 75g melted unsalted butter
- 32 oz full-fat cream cheese
- 325g granulated sugar
- ½ tsp salt
- 1 tsp vanilla essence
- 4 large eggs
- 120g heavy cream
- 240g sour cream
- 1 tbsp cornstarch
- 2–3 tbsp lemon juice
- 1 lb strawberries, for topping
- 55g sugar, for topping
- 1 tsp cornstarch, for topping
- juice of half a lemon, for topping
Instructions
- Preheat oven to 350°F (175°C).
- Combine crushed graham crackers, sugar, and melted butter; press into springform pan. Bake for 10 minutes.
- Beat cream cheese until smooth; mix in sugar, salt, vanilla, eggs (one at a time), heavy cream, sour cream, cornstarch, and lemon juice.
- Pour filling over crust and smooth the top.
- Bake for 60-75 minutes until set but jiggly in the center. Cool gradually in the oven.
- Prepare topping by cooking strawberries with sugar until juicy; thicken with cornstarch and lemon juice.
- Chill cheesecake before serving with strawberry topping.
