  • 2 teaspoons corn starch
  • 1 teaspoon cream of tartar
  • 1/2 stick unsalted butter (room temperature)
  • 2 tablespoons water
  • 1 teaspoon fresh lemon juice
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1 tablespoon cinnamon (reserve 1/2 for garnishment)
  • 1 stick unsalted butter (cold)
  • 1/4 cup boiling hot water
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar (to dust top of cobbler)

Instructions

  1. Preheat oven to 375°F.
  2. In a greased 9×13 baking dish, combine frozen peaches, sugars, extracts, spices, cornstarch, butter, water, and lemon juice. Mix well and cover with foil. Bake for 20 minutes.
  3. In a bowl, mix flour, sugars, baking powder, salt, and cinnamon. Cut in cold butter until crumbly. Add hot water and stir until just combined.
  4. Remove peach mixture from the oven and spoon dollops of dough evenly over the top.
  5. Sprinkle remaining sugar and cinnamon over the dough.
  6. Bake uncovered for an additional 30–45 minutes until golden brown.
