Ingredients
- 4 to 5 lb beef shoulder
- 2 cups fresh apple cider
- 2 cups chicken broth
- 2 tbsp Dijon mustard
- Fresh rosemary and thyme
- 1 red onion
- 2 firm apples
- 2 tbsp neutral cooking oil
- 1 tbsp dried minced onion
- 1 head garlic, top sliced away
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Preheat oven to 300°F (150°C).
- In a Dutch oven, heat neutral cooking oil over medium-high heat. Sear the beef until browned on all sides.
- Remove beef; add garlic, red onion, herbs, apple cider, chicken broth, Dijon mustard, salt, and pepper to the pot. Stir well.
- Return the beef to the pot, ensuring it's submerged in liquid. Cover and braise in the oven for about 3 hours.
- Add apple wedges during the last 30 minutes of cooking.
- Once done, let rest before slicing and serve warm.
