Ingredients

  • 4 to 5 lb beef shoulder
  • 2 cups fresh apple cider
  • 2 cups chicken broth
  • 2 tbsp Dijon mustard
  • Fresh rosemary and thyme
  • 1 red onion
  • 2 firm apples
  • 2 tbsp neutral cooking oil
  • 1 tbsp dried minced onion
  • 1 head garlic, top sliced away
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a Dutch oven, heat neutral cooking oil over medium-high heat. Sear the beef until browned on all sides.
  3. Remove beef; add garlic, red onion, herbs, apple cider, chicken broth, Dijon mustard, salt, and pepper to the pot. Stir well.
  4. Return the beef to the pot, ensuring it's submerged in liquid. Cover and braise in the oven for about 3 hours.
  5. Add apple wedges during the last 30 minutes of cooking.
  6. Once done, let rest before slicing and serve warm.
