Description

Sunny Eggs with Golden Roasted Potatoes & Sautéed Greens is a vibrant and nourishing breakfast that brings together perfectly cooked sunny-side eggs, crispy roasted baby potatoes, and fresh leafy greens. Ingredients

  • 2 large eggs
  • 200g baby potatoes (halved or quartered)
  • 1 cup leafy greens (spinach, kale, or Swiss chard)
  • 2 tbsp olive oil (divided)
  • 1 tbsp crumbled feta cheese
  • Salt & freshly cracked black pepper (to taste)
  • 1 tsp paprika or dried herbs (optional)

Instructions

  1. Preheat oven to 200C (400F) and toss baby potatoes with 1 tablespoon of olive oil, salt, pepper, and optional paprika. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. In a non-stick skillet over medium heat, warm a drizzle of olive oil. Add leafy greens and sauté for 2-3 minutes until wilted; season lightly with salt and pepper.
  3. In another skillet, heat remaining olive oil over medium heat. Crack eggs gently into the pan; cook sunny-side up until whites are set and yolks remain soft. Season with salt, pepper, and sprinkle feta cheese on top.
  4. Plate roasted potatoes, sautéed greens, and sunny-side eggs together. Serve immediately for an unforgettable breakfast.
