Ingredients
- 12 oz jumbo pasta shells
- 1 ½ cups ricotta cheese
- ½ cup sun-dried tomatoes (finely chopped)
- ½ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese (divided)
- 1 large egg
- 2 cloves garlic (minced)
- 2 ½ cups marinara sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Boil salted water in a large pot and cook the jumbo pasta shells until al dente. Drain and set aside.
- In a mixing bowl, combine ricotta cheese, sun-dried tomatoes, Parmesan cheese, half of the mozzarella cheese, egg, minced garlic, salt, black pepper, and Italian seasoning. Mix well.
- Fill each cooled pasta shell with the ricotta mixture and place them in a greased baking dish.
- Pour marinara sauce evenly over the stuffed shells and drizzle with olive oil.
- Top with remaining mozzarella cheese and cover with foil.
- Bake for 25 minutes covered; then remove foil and bake an additional 5 minutes until bubbly.
