  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups seafood stock
  • 1 cup heavy cream
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound lump crab meat
  • 1/2 pound scallops
  • 4 large crusty bread rolls

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the tops off the bread rolls and hollow them out. Brush with olive oil and sprinkle with garlic powder. Bake for 10–12 minutes until crispy.
  2. In a large pot, melt butter over medium heat. Add onion and garlic; sauté for 3–4 minutes. Stir in flour to create a roux.
  3. Gradually whisk in seafood stock and heavy cream; simmer for 5 minutes until slightly thickened. Season with Old Bay seasoning, smoked paprika, salt, and pepper.
  4. Add shrimp, crab meat, and scallops to the soup; cook for about 4–5 minutes until seafood is cooked through. Stir in fresh parsley.
  5. Ladle soup into prepared bread bowls and garnish with extra parsley.
