- 4 yellow plantains
- 1 lb ground beef

Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Cut the ends off each plantain, score the skin, and peel.
- Coat plantains with avocado oil and roast on the baking sheet for 30 minutes, flipping halfway.
- Sauté onions, garlic, and peppers in a skillet until softened. Add ground beef and cook until browned.
