Ingredients
- 2 cups strawberries (fresh or frozen)
- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup light brown sugar
- 1/2 cup unsalted butter
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Prepare the strawberry filling by cooking chopped strawberries with sugar, lemon juice, cornstarch, and vanilla in a saucepan over medium heat until thickened.
- Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
- Mix oats, flour, brown sugar, baking powder, salt, and cinnamon in a bowl. Cut in cold butter until crumbly.
