  • 2 cups strawberries (fresh or frozen)
  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 cup unsalted butter
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Prepare the strawberry filling by cooking chopped strawberries with sugar, lemon juice, cornstarch, and vanilla in a saucepan over medium heat until thickened.
  2. Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
  3. Mix oats, flour, brown sugar, baking powder, salt, and cinnamon in a bowl. Cut in cold butter until crumbly.
  4. Press two-thirds of the mixture into the bottom of the pan, add the strawberry filling on top, then sprinkle with remaining crumble and press down gently.
  5. Bake for 35–40 minutes until golden brown. Let cool completely before slicing.
